I'm with Vic in that head's matter more. I'm not sure anyone can line up 8 different types of wood of 12" toms and tell the type just by the sound. Maybe Bozzio but I know I can't...unless maybe that's something you are able to do with true pitch hearing or something...
With that said, I like dark color woods because of..*drum roll* the dark color!

IMO, no matter what wood you want, buy a kit w/o cymbals and then get cymbals YOU want.
If you want birch, won't they sell you a birch kit w/o cymbals to save you some money?

They'll probably have garbarbe single ply heads on them at the drum store.
I'd go for the birch kit, much lower price because the wood itself is easier to get than maple wood, and very similar sound. The maple shells are more expensive only because maple is not as easy to obtain as birch. Sound-wise, I'd doubt you will have any complaints at all even if you picked a set randomly from the two

For now I'd say get whatever your budget can handle and use any extra cash for higher quality cymbals. The starter packs sound like scrap metal compared to a good cymbal.
