Wood snare drums sound a bit more full I believe. I think Metal sounds have the potential to produce more over-tones. I used a cheap Stainless Steel snare drum for two years, and I found it easier to get the sounds I wanted out of it more than slightly more expensive wood snares.
That being said, I love a good thick snare like a 13 or 14 wide, and then a 6 or 7 inch depth.
If I could afford my own custom snare, I'd order a 13x7 maple.
